I couldn’t find my Mom’s recipe so I looked it up on the Web. This seems most like what she made.
1/2 C. butter or margarine, 800 cals
1 and 1/2 C. oatmeal, 450 cals
1 egg, 90 cals
2/3 C. sugar, 510 cals
1 Tbsp. flour, 50 cals
1 tsp. baking powder, 1 tsp. vanilla
Melt butter and stir in the oatmeal. Beat egg and sugar together until foamy. Mix the flour and baking powder together and then stir in the egg mixture and oatmeal mixture.
Drop batter one tablespoon at a time onto a greased and floured baking sheet, 2 or 3 inches apart.
Bake at 350 F for 5 to 10 minutes. These burn very quickly if the oven is too hot.
