Beet Brownies with Prunes Maureen Moore

This recipe makes 16 servings

10 oz. prunes
5 oz. chopped walnuts
5 oz. chopped dates
½ C. sugar
15 oz. can sliced beets
1 stick melted butter (½ C.)
3 or 4 eggs
1 C. milk
½ C. cocoa
1 C. whole wheat flour
½ tsp. salt, 1 tsp. baking powder

Put a cup of prunes in the blender and purée. Remove some of the puréed prunes and add the rest to puree. Remove some more prunes from the blender and then puree the beets. Mix together beets and prunes with sugar, melted butter, eggs, and up to a cup of milk. Then mix in cocoa, flour, salt, baking powder. After all is well mixed, add dates and walnut. Cook at 350° for a half an hour or more. I did this with an iffy oven so I don't know for sure how long to bake them.
