This recipe makes 16 servings
I accidentally forgot to add a cup of melted butter when I made this and the recipe turned out well anyway but it tasted like beets. I don't know if the beet taste was due to using a generic brand or because of the lack of butter.
10 oz. prunes
½ C. Splenda or other heat-stable artificial sweetener
15 oz. can sliced beets
4 eggs
1 C. milk
1 stick melted butter
½ C. cocoa
1 C. whole wheat flour
½ tsp. salt, 1 tsp. baking powder
Purée the prunes in a food processor and when well puréed add the can of beets and purée some more. Mix together wet ingredients and then add dry ingredients. Cook at 350° for about an hour.
