This recipe makes 2 servings at 225 calories per serving
1 pound grated zucchini
1 egg
1/4 cup flour
20 g oil
Mix almost a teaspoon of salt with the grated zucchini and let it sit for at least an hour in a sieve. Using a towel or paper towels squeeze out the excess moisture from the zucchini. It's paramount that you squeeze out all of the water because they will fall apart while frying if you don't. Mix the egg, flour, and zucchini together in a bowl.. Drop the mixture by large spoonfuls into a pan with some of the oil. After frying both sides of the fritters, add more oil and fry some more.
