56 g shredded cheese
1 egg
4 egg whites
28 g reduced fat margarine
1 slice toasted whole grain rye bread (Vollkornroggenbrot)
2 cups spinach
1 Tabkespoon butter
Whisk together eggs and cheese. Melt butter in a pan and add egg mixture. Fry until golden brown on the bottom and then flip and fry until the other side is done. Remove omelet and add spinach to pan. Cook until well-wilted. Serve spinach and omelet with toast smeared with margarine.
