Matchstick Salad

This recipe makes 4 servings

A simple crisp salad that keeps even in the heat.

Ingredients:
1 large tart apple
3 Golden Beets

1 - 2 Green onions
A couple heirloom carrots of various colors
Lime (for it's juice)
Olive Oil
Salt - Kosher or sea salt. You don't want the nasty metallic taste of Iodized table salt.

  • Pepper - Finely ground white pepper is best for appearance
    Cayenne Powder (Just a wee little pinch)

    Instructions:
    Jullien the apple, beets and carrots into little wooden matchstick sized pieces. It's prettiest when they are all the same size.  This will take a while so find some good music and a really sharp chef's knife.
  • Finely slice up the green onions in to very thin disks.
    Toss it all together and  coat with olive oil.
  • Add in fresh squeezed lime juice. Remember the vinnegrete rule of 1 part acid to 2 parts oil.
  • Season with salt, pepper, and just a teeny pinch of cayenne. (you don't what it hot, you are just brightening up the other flavors)


Perfect served chilled on a hot summer day. Also makes a nice replacement to Cole Slaw with any BBQ Pork dish.
