Strawberry Sauce

This recipe makes 6-8 servings

Strawberry Sauce

This is a simple to make fresh strawberry sauce for use over angel food cake or ice cream.

Ingredients:
* Large container fresh, fully ripe strawberries, topped and cut into 2-3 pieces depending on their size

* Sugar

*Fine Ground Black Pepper

 

Top and cut up the strawberries placing them in a large soup pan. Add in 3/4 cups of cane sugar and a 1/4 cup of water.  Bring to a strong simmer then reduce the heat and let it simmer, stirring regularly to dissolve the sugar and cook down the strawberries.

Once the strawberries are fairly soft, add in 1/8th teaspoon of finely ground black pepper.  Continue to simmer reducing the moisture until it is the consistency of a warm jam.  Spoon over freshly made angel food cake or a rich vanilla ice cream. (let it cool quite a bit before using on ice cream.

A note about the use of pepper.  When done correctly, you won't actually taste the pepper.  It simply acts as a brightening agent, increasing the intensity of the strawberry flavors.
